Make a Meal of Rosé Veal!
Cooking with Peter Gilpin, Chef, Commonwork tutor and food enthusiast.
Find out just how delicious this rarely used meat can be and learn how to recreate a veal feast at home. You’ll also learn how to make the most of cheaper and less well-known cuts of meat by trying your hand at more unusual recipes. With a delicate but sweet flavour, rosé veal is pink in colour thanks to dairy calves being fed a mixed diet. Calves from Bore Place are given plenty of space and sunshine and so yield delicious meat without the bitter aftertaste of their white veal counterparts. Try it and see over a lunch that will leave you drooling for more and primed to practice at home.

Willow Talk
Part One- Willow basket making
With John Waller, woodland management and conservation expert and qualified tree surgeon and coppice worker. Transform sweet smelling willow rods into a beautiful and useful basket. No previous experience needed. You’ll go home with a round-base basket of your own design and the techniques to be able to make more. Bring your own packed lunch. Fair Trade and organic refreshments are provided.

Spend a morning in the bluebell woods looking at the impact of coppicing and try your hand at making a mallet. Spend the afternoon on the pole lathe using your own energy rather than fossil fuel energy to make dibbers, candlesticks, spatulas and more to take home. Bring your own packed lunch. Small-scale production in various designs of oil drum demonstrates the theory for larger scale production. Smoky discussion and a walk in the woods complete the day before taking away a bag of charcoal.
